He took an old building and turned it into a niche restaurant that feeds high-quality ingredients to people looking for a fast hot meal. He isn’t fancy or trying to do anything to elaborate. He’s just focusing on one thing: locally sourced, delicious ingredients from farmers that he’s met personally and from farms that he has visited.
Not only is he all about fresh ingredients sourced locally but is also very focused on helping farmers create a business that is sustainable.
